How it all started,

While I was studying at Sault College under the Culinary Management program I was fortunate enough to be housed by a wonderful couple. One of them had an intolerance to wheat and dairy products. I practiced cooking wheat & dairy-free meals. They loved every bite of food I served them. Later during my first year I fell in love with a sweet guy named Mhat who was studying to be a Fish and Wildlife Conservation Technician (also at Sault College) . He just so happened to be allergic to gluten, and so I had another reason to cook gluten free. All was well, except that it broke his heart whenever he had to sit back and watch me eat a fresh hot slice of pizza, or a sandwich on italian white bread made of wheat.

The only bread that we had been able to find was of an O.K. quality. It came frozen and was made of rice tapioca. Many of you probably have this bread in your freezer at this very moment, and you would know that when it is thawed it is hard and gritty. You will also know that you must toast it very well or grill it in a panini press with butter or margarine in order for it to taste ok. And making sandwiches with it is a pain because once it is toasted you must eat it before it cools.

So I practiced over and over, perfecting measurements and timing. The first loaf I made was horrible. I lost confidence when it came out flat and thick, like a piece of gum. However, this did not stop me. I was determined to make a loaf of bread that even the harshest critics would love.

I remember it as crisp as yesterday, when Mhat took a bite and held back tears of joy. He ate it fresh, without butter, heating or toasting. and it was exactly like regular wheat bread. I knew that if he loved it, and I loved it (even though I can eat wheat), I would choose this bread because it is THAT good. We knew that that there must be others out there that would appreciate it as well.

And here we are today, ready to bring you to tears... of happiness of course. We dare you to buy a loaf. You Deserve It.
