Caribbean by Cornwall

As a first generation Canadian, 9th generation Haitian, I have had the honest privilege of enjoying some very outstanding meals made on the slimmest of budgets, all under the banner of "home cooking".

Enter Cornwall. As there is not an established authentic Caribbean location in Cornwall yet, I feel the genuine desire to throw some diversity into the mix, for literally, diversity's sake.

Now, enter the reality of opening up a business, especially, a food business. The entrepreneurial spirit is driven by the entrepreneur and at present I am still a wantra-preneur.

The public food offering events that have occurred in the past have been beyond influential and substantial enough to bring me to this point. However, they have costs.

And the costs can be savage.

So with all of that said, what is the game plan here?

Pikliz. Pikliz is by fair the easiest thing to produce with the widest audience appeal.

What is pikliz?

First off, it is pronounced "pick-Lees". Literally. And believe me it has existed well before 1985, I assure you.

Pikliz is a Haitian condiment like no other. Think of cabbage and carrots soaking in habanero juice.

Now imagine invigorating any meal, any bite, large or small with a flavor burst of spice. Heat increases as you add it so YOU control the heat.

So pikliz is the real secret here. As soon as profits allow it, pikliz will be served with every plate to allow everyone the opportunity to familiarize themselves with pikliz.

After the 2 months of hot food offering at Mindful Cookery, pikliz will be available for purchase at Mindful Cookery, for an almost, indefinite period of time.

As it could very well be possible that this opportunity, idea, dream of a full blown Caribbean joint, is way too large for me to tackle with these two arms, I can be very happy with a win through people enjoying pikliz.

Who knows...if Cornwall likes it enough, I could make a go at a resto on the back of a condiment ;)

Long story short, this is Haitian food. It is on for a limited time so please enjoy it while I am available to offer it.

Every dish is authentic in nature. It is prepared by myself but it is more than me. It is Haitian tradition and I am just a Canadian imitation but I stand by the food my Mom has passed on to me and I welcome you to enjoy it all.
