We are a small family operated fish smoking plant, located in beautiful, Prince Edward Island, Canada. Incorporated in 1994. Our products have been served in some of the finest restaurants from Tokyo to Miami and across Canada.
We smoke our fish in the Old World way! We combine traditional European craftsmanship with all natural ingredients. We start with fresh salmon from selected growers; expertly cure it with sun dried sea salt to intensify the precious, natural Omega - 3 oil. This protects the delicate flavour of the fish.
We smoke it over a smokey fire using our exclusive hand cut local Prince Edward Island hardwoods. We add no sweeteners and, of course, no artificial preservatives. This Old World way results in a buttery taste, moist texture, a firm yet delicate smoked flavour, and not salty.
