Henry loved all things practical and was known to fancy a pint of ale or a fine single malt scotch.

His love of food, fun and music was anchored in the traditions of the East Coast and inspired by the family connection to the Louisiana "Cajun" flavours and culture. Food that wasn't "fancy" but flavourful.....down home, stick to your ribs, hearty meals that would keep you satisfied. That was his way.

The family story begins with two brothers in 1665, Gabriel & Jacques, who left Normandy France for New France (Canada) and ultimately Cape Breton to begin a new life.

In the mid 1700's during the British Expulsion of New France, the family tree branched out and descendants of one of the brothers set out for a new life in Louisiana. They brought with them the culture and food of the Acadian way of life from Eastern Canada. The word "Cajun" comes from the word Acadian and is the Bond that connects the two regions.

The southerners probably didn't know what to think upon their arrival! But I'm sure they appreciate that we brought them Mardi Gras.

Generations of Henry's Acadian ancestors were hearty industrious people who learned to be practical and enjoy what they had. They grew up with the love of flavourful hearty food and generous drink, much of it inspired by the Public Houses of France and Britain.
